Since the covid lockdown, I cook several times a day for my children, early and late breakfast, lunch and snacks, dinner…
I noticed that we use to eat too much meat than we have to. So I took time to test some vegetarian recipes and I want to share some of them with you today.
Zucchinis and goat cheese pie.

Ingredients :
200g of zucchinis
200g of goat cheese
1 short pastry
20cl of fresh cream
2 eggs
Salt and pepper
Step 1
Cut the zucchinis into slices and cook them in a pan.
Step 2
Prepare the short pastry in a dish, pierce it with a fork.
Step 3
Put the goat cheese pieces on the pastry and add the cooked zucchinis.
Step 4
Mix the fresh cream with the eggs and pour it into the pie.
Step 5
Cook it 25 minutes at 410 °f
Mushrooms and mozarella risotto

This one is my favorite!
Ingredients :
1 onion
150 g of risotto rice
200g of mushrooms
1 piece of mozzarella
1 vegetable stock
Olive oil
Salt and pepper
Step 1
Warm a pot of water with the vegetable stock.
Step 2
In a pan, cook the onion with some olive oil. Add the rice and cook 1 minute on medium fire.
Step 3
Add 2 laddles of vegetable stock on the pan, mix it well until the rice soaks all the liquid.
Repeat this operation twice (this takes 20 minutes)
Step 4
Once the rice coocked (pasty appearance), add the mozzarella and melt it down.
Step 5
In a second pan, cook the mushrooms and add them to the rice .
Salt and pepper! It’s ready!
Brushettas

Ingredients :
4 pieces of bread
1 box of tomato sauce
1 piece of mozzarella
Italian spices
Some Salad
Step 1
Spread the tomato sauce on the bread.
Step 2
Add the mozzarella slices
Step 3
Add some italian spices.
Cook it 10 minutes at 356°f
It’s ready!!
Eat it with a simple salad.
