As a busy mom and an aspiring housewife, I am always looking for things that make my life easier.  So once I heard about Instant Pot, I had to do some research.  I mean, they just seem to good to be true!

What can you do with an instant pot?

An Instant Pot is a slow cooker, pressure cooker, rice cooker, yogurt maker that you can also use to saute, steam, and keep food warm.  Heck, the fancy ones can even bake cakes!

I’m not a big fan of clutter on my kitchen counter tops (I already have a KitchenAid, Cuisinart, and automatic coffee machine out there!), but the fact that this amazing gadget can do all of these things totally justifies it taking up that much counter space.

As I was researching Instant Pot recipes for the first time (without really knowing what an instant pot is) it seemed to me that all you could make with it was soup.  There are millions of instant pot soup recipes out there!  And though I do love soup, I am mainly concerned about getting a “real meal” on the dinner table, and avoiding the politely-disappointed look on my fella’s face when he gets a bowl of soup for dinner.

So here are the best instant pot recipes I could find – I hope you enjoy them.

Ah, there’s nothing like having pot roast for Sunday dinner!  Isn’t it funny that when you serve something like this, everyone thinks you spent hours toiling in the kitchen when actually it’s one of the easiest things in the world to make – especially if you do it in an Instant Pot!

Italian tomato meatballs from Instant Pot Eats

This is one of my kid’s favorite recipes.  Serve this on a bed of zoodles or mashed potatoes (or pasta, if you’re lucky enough not to be worried about carbs and gluten) and watch them gobble it up.  I like to make a quadruple batch and freeze half for another time.

Instant Pot chicken tikka masala from Wholesomelicious

To be honest, I’ve never made Chicken Tikka Masala.  I have this recipe printed out and in my “want to make” recipe binder, but I never get around to it.  What’s not to love?  It includes some of my all-time favorite flavors.  Ingredients include coconut milk, garam masala, turmeric, garlic, ginger, and coriander!  It’s a quick, healthy weeknight meal that you can make in 20 minutes.

Instant Pot Rice Pilaf via Omnivore’s Cookbook

Rice pilaf is one of my favorite comfort foods, but I hardly ever make it because of the cooking time on the rice.  Well, with the Instant Pot that’s not an issue anymore.  Just dump everything in, and you have a satisfying dinner in 8 minutes (not including time for schnippling veggies, of course.)  The trick here is to not use your instant pot as a rice cooker but as a pressure cooker.

Shrimp Scampi Paella via Health Starts in the Kitchen

When I came across this recipe, I thought it was pretty brave to pressure cook shrimp. with this recipe, just throw in your raw frozen shrimp with the rice and let ‘er rip!
